My ideal Sovereign 30 would be built using a combination of strip planking overlayed with two veneers of cold molding. Strip planking produces most of it's strength mono-directionally, where as a combination of strip planking and cold molding produces multi-directional strength and in my opinion produces a safer, stronger hull. I believe that this option also minimises the visual effects of lines appearing through the hull due to timber shrinkage which is not uncommon in older strip planked boats. As these boats have been designed for ocean voyaging, structural strength and hull integrity are very high priorities for me this is why I prefer the idea of strip plank/cold molded construction. This is the only deviation from Tom's plans that I would consider apart from minor layout options.
