Having been for some time now in a yard renovating our ply/epoxy 11 meter Buehler-designed sailboat, I can remember numerous battles others had with metal tanks, particularly ones built in during construction, removable only by destruction of tanks or cabinetry. I've just had two SS fuel tanks made, but they are, by design and location, easily removed. I'll be adding a couple of bladder tanks under the sole soon. Their flexibility will make then easy to remove. We already have a couple of Vetus water bladders and they work fine and are easy to clean and sanitize. Look at the range of bladder tanks made by Turtle Pac (at turtle-pac.com). Their product lines look nearly indestructible. And they do custom. Easy to build into your boat a open topped or lidded box for a flex tank to go into (and out of) easily. The only down sides of a bladder tank is that there is no reserve buoyancy in case the boat might flood and no way I know of to add a gauge.
